Waldorf Astoria Kuala Lumpur has named Garima Arora and Jean-Georges Vongerichten as the architects of its culinary identity—setting a new benchmark for a hotel opening in the city.

Waldorf Astoria Kuala Lumpur is set to open in late 2026 at the corner of Jalan Raja Chulan and Jalan Sultan Ismail—the Bukit Bintang address where Hotel Istana once stood. The 23-storey, all-suite property will offer 279 suites, a spa, and some of the city’s grandest event spaces. Its most recent announcement is also its most significant: a culinary programme anchored by two of the world’s most decorated chef-restaurateurs, Garima Arora and Jean-Georges Vongerichten, who will together oversee four of the hotel’s seven dining outlets.

The appointment of Etienne Dalançon as General Manager, announced last month, set an early tone. A self-described gourmand, Dalançon previously led Waldorf Astoria Maldives Ithaafushi to a Forbes Travel Guide Five-Star rating. The chef announcements that followed confirm the direction: at Waldorf Astoria Kuala Lumpur, dining is a central pillar of the guest experience, not an afterthought.

The Hotel

The hotek sits steps from Pavilion Kuala Lumpur, in the heart of the golden triangle, at the intersection of Jalan Raja Chulan and Jalan Sultan Ismail—one of the city’s most recognisable corners.

Beyond the luxurious accommodations, the hotel will feature a full-service spa, and event spaces that rank among the largest and most refined in the city—a grand ballroom among them—making it a natural destination for high-profile gatherings and celebrations. A curated art programme runs throughout the property, reflecting its commitment to embedding a sense of place.

Among the details that signal a Waldorf Astoria is the signature clock, a tradition at every property in the brand’s portfolio, each one uniquely designed to reflect the culture and character of its location. Kuala Lumpur’s will be no different—a piece as much art as timepiece, and one of the quieter but more telling markers of how seriously the brand takes its sense of place.

Garima Arora is the chef-owner of Restaurant Gaa in Bangkok, which holds two Michelin stars. She was the first Indian female chef to earn a Michelin star, and has since been recognised as Asia’s Best Female Chef. Her restaurant is a fixture on Asia’s 50 Best Restaurants list.

Her concept for the hotel is Yaari—the Hindi word for friendship—created specifically for the Waldorf Astoria Kuala Lumpur. The menu draws on the full breadth of Indian regional cooking: the tangy coastal curries of the south, the smoky kebabs of the north, refined chaats, and a dessert menu rooted in traditional mithais. Several private dining rooms sit within the space.

Jean-Georges Vongerichten is one of the most prolific chef-restaurateurs in the world, with over 60 restaurants across Miami, Las Vegas, London, Paris, Shanghai, and beyond. His flagship, Jean-Georges in New York, holds two Michelin stars. He trained early in his career across Bangkok, Singapore, and Hong Kong—making Southeast Asia familiar ground for him. He will open three concepts at Waldorf Astoria Kuala Lumpur:

JG KL

The fine dining flagship. JG KL draws on French technique with American and Asian influences — a format closely related to the Jean-Georges mothership, with a menu guided by bold flavour contrasts and precise execution.

abc kitchens KL

Vongerichten’s abc concept exists in three forms in New York: farm-to-table abc kitchen, plant-forward abcV, and Latin-influenced abc cocina. At Waldorf Astoria Kuala Lumpur the restaurant is a single, energetic space spanning all three registers, with a seasonal menu and what the team describes as a tropical restraint in its design.

The Bar by JG

The most casual of the three. The Bar by JG is built around small plates and shareable dishes, a curated beverage programme, and a relaxed format suited to pre-dinner drinks or a full evening. French in its elegance, Southeast Asian in its energy.

Waldorf Astoria KL Bets Big on Dining

Seven outlets across a single property, each with a distinct identity. Beyond the four bearing the names of two of the world’s most recognised culinary figures, the remaining three are no less considered.

Peacock Alley—a fixture at every Waldorf Astoria worldwide—will take its place in the lobby as the hotel’s social heartbeat. Afternoon tea, cocktails, and its signature Art Deco atmosphere make it as much a destination for locals as for guests. Istana, the hotel’s all-day dining outlet, carries forward the name of the building’s predecessor—a deliberate act of continuity—and centres local cuisine within an expansive buffet setting, spilling from marble interiors into an outdoor garden. Coda Bar rounds out the programme as an intimate late-night destination: a quieter, more private counterpoint to the energy of the rest of the floor, open until midnight.

Together they form a dining floor designed to be visited repeatedly and for different reasons: a fine dining reservation at JG KL on one evening, afternoon tea at Peacock Alley on another, a nightcap at Coda Bar after. When Waldorf Astoria Kuala Lumpur opens later this year, it will do so with one of the most complete dining propositions this city has seen at a hotel opening.
