
While the global palate often associates Spanish dining with the sun-drenched coastlines of the Mediterranean, there is a different, more rugged soul found in the “Green Corner” of the northwest. This is Galicia—a land of mist, granite, and an Atlantic coastline that yields some of the world’s most prized seafood.
On Friday, 13 March 2026, this specific culinary coordinate arrives in Kuala Lumpur as Nova, the Michelin-starred jewel of Ourense, takes over the kitchen at Bocado for a singular, one-night-only engagement.
The event marks the first Malaysian appearance for Nova, a restaurant that has held its Michelin star with persistent dignity since 2014. Led by cousins Julio Sotomayor and Daniel Guzmán, Nova is celebrated for a philosophy they call Cociña de raíces (root cuisine). In their hometown of Ourense, this is guided by a “market-led” discipline where the menu is never fixed, but dictated by the daily harvest of the land and sea.

For the Malaysian diner, this collaboration offers a rare introduction to Galician technical clarity. Sotomayor and Guzmán eschew the flamboyant tricks of modern gastronomy to focus on the purity of the product. Their style of cooking that values the mineral snap of a crustacean or the earthy depth of Rubia Gallega beef over unnecessary garnishes.
This debut is also a personal milestone for Bocado’s Chef Víctor Santos. Also a native of Galicia, Santos’s hosting of his fellow Galicians transforms the evening into a literal homecoming. The synergy between the three chefs—bound by shared heritage and sensory memories—promises an evening of visceral, authentic hospitality.

The exclusive 9-course tasting menu includes beverage pairings and is priced at RM438++ per guest. With restricted reservations and only two seatings available (6:00 PM and 8:30 PM), this is a fleeting window into the heart of Galicia.
